You’ve already read about the Love Elevated Wedding Symposium and saw a fabulous, editorial destination wedding in Saint Lucia – but what all is there to do on this island? A lot. Trust me. Saint Lucia has epic beaches for days, watersports, snorkeling, diving, sailing, a volcano (yes!), botanical gardens, and so much more. However, during Chelsea of Bit of Ivory Photography & my time there – we naturally gravitated towards anything food related.
One of the definite highlights of our visit to Saint Lucia was participating in an intimate cooking class held at Spices Cooking Studio. This activity would make for a fun and unique rehearsal dinner, bachelorette party, or honeymoon experience. The studio’s setting was picture perfect and the owner / cooking instructor Jenni was such a sweetie and super patient with me as I bulldozed my way around her kitchen.
Between the lot of us (the press trip group) we had fun making Christophene Gratin Soup, Creole Stewed Chicken, Coconut Rice and Peas, Baked Passion Fruit – Cinnamon Plantains, and even a dessert – Ginger-Spice Ice Cream.
Another epic evening happened at The Landings – one of Saint Lucia’s luxury resorts. The Landings occupies one of prettiest beaches on the planet and is known for its massive and spacious rooms, each with its own dipping pool. The evening started beachside with champagne and then we drifted upstairs to one of The Landings’ three bedroom, ocean view penthouses for a private, catered dinner on the suite’s roomy lanai.
Brace yourself – I’m about to share the menu from that evening… The Landings’ Executive Chef Frederic Cougnon outdid himself…
Tuna & avocado tartar, chicken sate, and a beetroot gazpacho to start with…
followed by honey and rosemary pumpkin ravioli with a goat cheese beurre blanc.
We then cleansed our palettes with a basil and mango sorbet and then had jerk spiced local snapper fillet on fennel with a carrot and rice noodle salad topped with a passion fruit reduction…
and to finish off this glorious meal – island grown pineapple Carpaccio, coconut minted coulis, and coconut ice cream.
It truly was one of the most magical nights of my life. Plus, a complete Johnny Depp from Pirates of the Caribbean lookalike showed up (evidence here on Instagram!) for a few laughs.
Needless to say, a catered meal on your private patio at The Landings would be an awesome start to any destination wedding, bachelorette weekend away, or honeymoon.
Another evening out wining and dining took place at Calabash Cove Resort & Spa. One of the attendees on our press trip was Tom Bastek – a writer for Travel Pulse, and he truly couldn’t have described our night there better than in the article he wrote about it (read it here). Conrad, the owner, was a total charmer and delighted us with stories all evening. We spent SUCH a long time there but it was so lovely that it felt fleeting. I can’t recommend it highly enough!
